Kefir needs to be kept at room temperature to ferment well; scientifically, room temperature is defined as 25 °C. Both kefir grains and our Maintenance Free Kefire Culture are flexible so will grow quite well on the kitchen counter during summer, even when the days get hotter than that, and will still ferment well in spring and autumn when the nights are colder than that. However, in winter your kefir will just about shut down and stop growing altogether.
We have heating two solutions;
1. Stand your kefir jar in some water that is heated with an aquarium heater, like this;
2. Keep your kefir in an esky or styrofoam box with any other ferments such as kombucha or fermented veggies and use a heater mat like this;
