If you are using the airlock in one of our systems you may not see any bubbling activity in the airlock.
The fermentation can be slow and with only a relatively small amount of vegetables in the system, the amount of gas produced will most likely not be enough to produce many bubbles. The main thing I notice is the vegetables that were sitting in the bottom of the pail, start to float away from the bottom as the fermentation kicks in. This is due to tiny bubbles of gas all over the vegetables creating just enough buoyancy to lift all but the heaviest of veggies.
