Here in Australia, the kilojoule information per serving or per 100 grams is listed on the packaging of the soy milk you are using. Some of the kilojoules (energy) come from sugar in the soy milk. The bacteria/culture eats the sugar, lowering the kilojoules. The longer the fermentation, the more sugar will be eaten and the lower the kilojoules will be.
