Because of the high humidity in some parts of Australia, drying your cheese can sometimes take more than just a few days and this can increase the chances of mould spores in the air landing on your cheese. This can also happen when ageing cheeses that have not been waxed or vac-packed. Mould growing on the outside of cheese can also be an important part of the ageing process. To remove any unwanted mould, simply wipe it off with a cloth moistened with brine or vinegar.
